Iron Rich Hummus
Easy to make, great on its own or on toast for your little one. Toddlers can use it as a dip too or throw it on pasta for a great sauce The addition of spinach amps up the iron.
Hiding spinach in this hummus is a key to adding iron without straight up giving spinach in its usual form. It blends great into the texture of the hummus. Make a big batch and enjoy someone yourself! The lemon juice also goes a long way in helping absorb the iron. Ice is the secret to a super smooth hummus!
Ingredients
2 cups of chickpeas
2 Tbsp tahini
1 lemon, juiced
1 garlic clove
2 Tbsp olive oil
1 1/2handfuls of spinach (fresh not frozen)
1/2 cup of ice
Method
Add all of the ingredients (except ice) to a food processor or blender. Blend until it begins to get smooth.
Add the ice and continue to blend until a very smooth consistency.
