Creamy Broccoli Soup
Packed with nutrition and treenuts!
Pureed soups have got to be the easiest baby food, it’s essentially baby food already but both mom and dad can also eat it. Truth be told, we made our own version because we don’t want to give him too much salt. This one was made creamy with cashews. I have heard from many people that the baby has to eat the allergen 3 times to confirm they are not allergic! So far so good on tree nuts and all allergens!
Ingredients:
1 tsp olive oil
1 onion, diced
2 garlic cloves, minced
2 cups frozen or fresh broccoli
1/2 cup cashews
1-2 cups water
1 lemon, juiced
1 tbsp nutritional yeast
Method:
1. In a pot, add the olive oil and heat over medium heat. Add the onions and garlic and cook for 2 minutes.
2. Add the broccoli and the rest of the ingredients. Bring the heat to high and bring to a boil, lower the heat to low and simmer until the broccoli is fully cooked and soft.
3. In a blender, blend until smooth.
Rory loved this soup, he couldn’t stop eating it! The first time we made this, we made it too thin, so I thickened it with some mashed avocado, which he loved. We served it with a side of mashed sweet potato and he was one happy camper!
